Serves 4
Ingredients:
1/2 cup diced tomatoes
1/2 cup diced green bell pepper
1/2 cup diced onion
1/4 cup diced carrots
1/4 cup fresh salsa
2 garlic cloves, minced
1-2 tablespoons of olive oil
1 cup uncooked SooFoo®
Salt and pepper
Instructions:
1. Cook SooFoo® as directed (see "cooking instructions") and set aside
2. Combine oil, green peppers, onions and garlic in large saute pan and cook until tender
3. Add tomatoes and salsa and continue to cook until tomatoes are tender
4. Add cooked SooFoo™ and heat for an additional 1-2 minutes
5. Season to taste
